Ingredients for this recipe are pretty rough for now. Could probably use some tweaking... Also, nothing is stopping you from adding mushrooms, eggplant or parsnips. In fact, you could even replace the zucchini & squash with them.
Ingredients
1 medium onion
1 medium shallot
1 lb bag of baby carrots, though normal carrots would probably be fine too
1 lb of beyond meat, though a little less would be fine too
2 medium potatoes
1 zucchini (could perhaps have 2)
1 yellow squash (could perhaps have 2)
Chili powder
Cumin
Cayenne pepper
Garlic salt
Salt
Pepper
Balsamic vinegar
Red wine
Prepare Big Veggies
Pre-heat oven to 400°F.
Peel potatoes.
Peel carrots, if not using baby carrots.
Roughly cut potatoes into 0.5-1 inch pieces.
Roughly cut 3/4 of the carrots. If baby carrots, cut in half; otherwise also cut into 0.5-1 inch pieces.
Toss in olive oil and lay out in pan.
Season with salt and pepper.
Put in oven and check periodically until soft. Potatoes may soften earlier than carrots. If so, fish them out and let the carrots cook longer. Don't overcook the potatoes!
When softened, set aside.
Prepare Beyond Meat
Put pan over medium-high heat, add beyond meat for 5-8 minutes.
Season with cumin, chili powder and cayenne pepper – roughly 2:2:1.
Season with salt and pepper.
Set aside.
Prepare the Squash
Cut zucchini and squash into 0.5 inch slices.
Put pan over medium-high heat, add olive oil and squash.
Season with garlic salt and pepper.
Sauté until slightly browned, set aside.
Prepare the Onions
Dice onion and shallot, cut remaining carrots into 0.25 inch slices.
Put pan over medium heat, add olive oil, onion, shallot and carrots.
Season with salt and pepper.
Cover for 5 minutes to soften veggies.
Remove cover and add balsamic vinegar.
Continue sautéing until onions become slightly translucent.
Bringing It Together
Add beyond meat and squash and stir together.
Add roasted veggies and gently stir.
Add a splash of red wine and cover for 2-3 minutes.
